Ingredients

Ingredients
  • 4 boneless skinless chicken breasts (6 to 7 ounces each)
  • 1 1/2 teaspoons kosher salt divided
  • 2 tablespoons whole black peppercorns coarsely crushed
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter divided
  • 1 medium shallot finely minced
  • 2 cloves garlic minced
  • 1/4 cup brandy or cognac
  • 3/4 cup low-sodium chicken broth
  • 3/4 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 3 sprigs fresh thyme
  • 1 tablespoon chopped fresh parsley plus more for garnish

Equipment

  • Equipment
  • Large heavy skillet, stainless steel or cast iron
  • Meat mallet or rolling pin, for pounding the chicken
  • Instant-read thermometer
  • Tongs
  • Mortar and pestle, or a zip-top bag and a heavy pan, for crushing peppercorns

Method

Instructions
  1. Halve each chicken breast horizontally into two cutlets, pound to 1/2-inch thickness, pat dry, and season with 1 teaspoon salt.
  2. Press crushed peppercorns onto both sides of each cutlet.
  3. Sear in olive oil over medium-high heat, in batches, 3 to 4 minutes per side, until 165F internally. Set aside and tent with foil.
  4. Saute shallot and garlic in 1 tablespoon butter over medium heat, 1 to 2 minutes.
  5. Off heat, add brandy; return to heat and simmer 30 seconds, scraping up browned bits.
  6. Stir in broth, cream, Dijon, thyme, and remaining salt; simmer 4 to 5 minutes until thickened.
  7. Discard thyme. Off heat, whisk in remaining butter and parsley.
  8. Return chicken to the skillet, spoon sauce over, warm 1 to 2 minutes, and serve

Notes

Swap chicken breasts for 2 pounds boneless, skinless chicken thighs; skip pounding and sear 5 to 6 minutes per side.
For a non-alcoholic version, use an extra 1/4 cup chicken broth plus 1 teaspoon apple cider vinegar in place of the brandy.
Store leftovers in the refrigerator up to 3 days; the sauce does not freeze well.
